Chocolate Cherry Cookies

My grandma and mom created this recipe with chocolate chips, cherries and spices by combining their favorite parts of various cookies. Then dad made ice cream to turn them into ice cream sandwiches.

Servings: about 4 dozen
Ingredients:
1/2 cup plus 1 tablespoon oil
softened
1/2 cup sugar
1/4 cup dark brown sugar
1 large egg Eggland’s Best
room temperature
1 teaspoon vanilla extract
1 teaspoon maple flavor
1-1/2 cups all-purpose flour
5 teaspoons baking cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup semi-sweet chocolate chips
1 cup white pastries
1/2 cup dried cherries or dried cranberries
1/4 cup sweetened grated coconut

Cooking:

Preheat oven to 350°. Butter, gradually adding sugar, until light and fluffy. Slowly beat in egg, vanilla and maple flavors.
In another bowl, sift together the flour, cocoa cake, baking soda, and salt. Gradually beat into the creamy mixture just until moistened (do not overmix).
Add semi-sweet chocolate and white pastries, dried cherries and coconut. Spread the batter in tablespoons, 2 inches apart, on ungreased baking sheets. Flatten lightly.
Bake until golden brown, 10-12 minutes. Cool in skillet for 5 minutes. Remove wire racks to cool completely.
